King Louis XIV, or Lodewyck, as he was known in Holland, was passionate about the finer (some would dare say finest) things in life. He loved food, and commissioned his kingdom's best chefs to expand the boundaries of gastranomy for both his personal pleasure and as a tool of political persuasion. His culinairy exploits, spearheaded by his expert chefs, and his constant desire to expand the boundaries of his kingdom directly led to the little croquette and littler boulette becoming a huge part of Amsterdam's food culture.
